Schwarzwälder Kirschtorte or Black Forest Cake has become one of our favorite staples for birthdays and other celebrations.

Invented in Germany in the early 20th century, this cake is made from layers of chocolate sponge cake, whipped cream and a cherry filling with Kirschwasser. The cake is moist and very flavorful.

Christstollen is a fruitcake made from yeast dough, butter, raisins, almonds, candied citron and candied orange peel. It has an almost bread-like consistency and is a wonderful staple of traditional German Christmas baking.

Here is my Mom's recipe for Christstollen. It is less sweet than the Stollen you may be able to find in stores.

A sponge cake filled with chunks of pumpkin, and covered with a pumpkin-and-cream icing.
