Two weeks ago I was in Geneva, Switzerland for a business trip. In addition to the usual excess of cheese fondue, I also had some really wonderful foamed dishes at a friend's house and in a nice restaurant.
It's Halloween! Pumpkin season. And it's time for another little experiment. The result: A chanterelle and pumpkin soup with garlic, cayenne and a hint of ginger, cumin, cinnamon and allspice. Subtle flavors. Really good!
A flavorful, very elegant and visually appealing dinner. Scallops on a bed of creamed chanterelles and asparagus puree served with asparagus tips and pasta.
